Mandarin Muffins - cooking recipe
Ingredients

1/2 c. butter or margarine
1 c. light brown sugar
3 large eggs
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. salt
1 1/2 c. whole wheat flour
1/4 tsp. vanilla
1 c. orange juice
1 can (11 oz.) mandarin orange segments, drained and cut in thirds
1 can (4 oz.) chopped walnuts or pecans
Preparation

Heat oven to 350\u00b0.
Grease 18 regular muffin cups.
Beat butter and sugar until pale yellow and fluffy.
Beat in eggs.
Sift all-purpose flour with baking powder, baking soda and salt.
Stir in whole wheat flour.
Add vanilla to orange juice.
Fold flour mixture into butter mixture alternately with orange juice, ending with flour.
Fold in oranges, then nuts.
Spoon into muffin cups and bake until lightly brown, about 30 minutes.
