Potato Casserole - cooking recipe

Ingredients
    1/3 c. onion
    1 c. grated cheese
    1 can cream of chicken soup
    salt and pepper to taste
    8 medium potatoes, peeled, diced and cooked
    1/2 c. butter
    8 oz. sour cream
    1 Tbsp. parsley
    Ritz crackers
Preparation
    Mix onion, cheese, soup, sour cream, salt, pepper and parsley together well.
    Add potatoes and pour into a 2 1/2-quart buttered casserole dish.
    Top with cracker crumbs mixed with melted butter.
    Bake at 350\u00b0 for 30 minutes.
