Yam-Stuffed Sausage - cooking recipe

Ingredients
    2 lb. smoked sausage
    1 large can yams with pineapple
    1/2 tsp. cinnamon
    1/4 tsp. orange peel
    1 to 3 c. light brown sugar
Preparation
    Cut sausage into 3-inch pieces.
    Cover with water and cook until tender; drain.
    Slice lengthwise to form a pocket.
    Arrange on cookie sheet, pocket side up.
    Drain yams and pineapple (reserve 3 tablespoons juice).
    Mash potatoes and pineapple.
    Add sugar, spices and juice; cream well.
    Spoon filling into sausage pockets. Dot with butter.
