Chicken Country Captain - cooking recipe
Ingredients

1 chicken, cut up
1 large onion, chopped
1/2 stick butter
1 tsp. curry powder
1 large can tomatoes
1 handful almonds, blanched
salt and pepper
flour
1 large green pepper, finely chopped
1/3 tsp. thyme
1 Tbsp. parsley, chopped
1 clove garlic, chopped
Preparation

Dress a chicken.
Season inside and out with salt and pepper. Prepare stuffing.
Fill chicken, packing lightly.
Sew up opening. Place in roaster.
Do not cover.
Cook in moderate oven at 300\u00b0 to 350\u00b0 until tender.
Allow 25 minutes per pound.
If desired cover breast of chicken with thin strips of salt pork.
Baste frequently.
