Fresh Cauliflower Mimosa(Serves 4) - cooking recipe

Ingredients
    1 medium head cauliflower, separated into flowerets
    boiling water
    juice of 1 fresh lemon
    2 Tbsp. diet margarine, melted
    2 Tbsp. grated Parmesan cheese
    1/4 tsp. paprika
    salt to taste
    pepper to taste
    1 hard-cooked egg, sieved
    1 Tbsp. chopped parsley
Preparation
    Place cauliflower in saucepan in 1-inch of boiling water with juice of 1/2 lemon; cook until tender, 5 to 10 minutes.
    Drain and place on serving platter.
    Sprinkle cauliflower with margarine and remaining lemon juice.
    Combine Parmesan cheese and paprika; sprinkle over cauliflower.
    Season to taste with salt and pepper. Top with sieved egg and parsley.
    Contains 110 calories per serving.
