Homestyle Scrambled Eggs - cooking recipe

Ingredients
    4 eggs
    1 Tbsp. minced onion
    3/4 tsp. salt
    3 Tbsp. water
    1/4 c. margarine or butter
    1 c. diced tomatoes
    1 c. diced cooked potatoes
    1 c. diced zucchini
Preparation
    Beat eggs.
    Add salt and water.
    Melt margarine or butter in large skillet over medium heat; cook and stir vegetables in margarine for 2 minutes.
    Pour on egg mixture.
    As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that uncooked portions can flow to bottom.
    Cook until eggs are thickened throughout but still moist, 3 to 5 minutes. Makes 2 large servings.
    Good for a fast, last minute meal.
