Red Beans And Rice - cooking recipe
Ingredients

2 Tbsp. oil
1/2 c. celery, diced
1/2 c. onion, diced
1/2 c. bell pepper, diced
1 (14 1/2 oz.) can Italian style or Cajun style stewed tomatoes
1 1/3 c. water
2 c. fast cooking rice
1 (15 oz.) can red kidney beans
Preparation

Heat oil in large skillet.
Add celery, onion and pepper. Stir about 2 minutes.
Add tomatoes and water.
Bring to a boil. Add rice.
Stir, cover and let stand 5 minutes.
Add kidney beans and stir until heated.
Makes 4 to 6 servings.
