Zucchini Bread - cooking recipe

Ingredients
    3 eggs (room temperature)
    1 c. oil
    2 Tbsp. vanilla
    1 c. packed brown sugar
    1 c. white sugar
    3 c. flour
    1 tsp. salt
    1 tsp. baking soda
    1/4 tsp. baking powder
    1/2 tsp. nutmeg
    2 Tbsp. cinnamon
    2 to 2 1/2 c. grated zucchini
    walnuts (if desired)
Preparation
    Preheat oven to 375\u00b0.
    Spray 3 small loaf pans with Pam and generously sprinkle sugar inside each pan.
    Mix all dry ingredients together and set aside.
    Beat eggs, oil and vanilla; add sugars and beat well.
    Add dry ingredients (batter will be thick and stiff).
    Add zucchini and mix well.
    Add walnuts.
    Pour into loaf pans and bake for exactly 1 hour.
    Cool in pans for 10 minutes.
