Pear Preserves(From The Files Of Louella Scott Williams) - cooking recipe
Ingredients

4 qt. pears
2 1/2 c. water (divided use)
juice of 1 lemon or 1/2 c. lemon juice
7 c. sugar
Preparation

Peel and cut up 4 quarts of pears.
Place in large cooking container (8 quart stock pot is ideal) with 1 cup of water.
Cook 15 to 20 minutes, stirring occasionally.
Add juice of lemon or 1/2 cup lemon juice.
While pears are cooking, mix sugar with 1 1/2 cups water.
Heat to a boil and boil for 5 minutes.
Add to pears and cook about 1 hour and 20 minutes more.
Place in appropriate size jars and seal with melted wax and good jar lids.
