Apple Oatmeal Muffins(Low Calorie - Low-Fat) - cooking recipe
Ingredients

1 medium whole egg
2 egg whites
1 c. apple juice
1 c. skim milk
1 Tbsp. vegetable oil
1 Tbsp. vanilla
1 tsp. cinnamon
1 c. all-purpose flour
1 c. whole wheat flour
4 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1/2 c. brown sugar
2 c. chopped, unpeeled Red Delicious apples
1 c. oatmeal
1 lemon zest, grated
Preparation

Preheat oven to 350\u00b0.
Combine wet and dry ingredients separately.
Fold together until blended.
Spoon into paper cup liners in a muffin pan and bake for 25 minutes.
Yields about 23 muffins, 2 ounces each.
