Squash Fritters - cooking recipe

Ingredients
    2 medium zucchini or 4 to 5 yellow squash
    1 grated carrot
    1 Tbsp. chopped onion
    1/4 c. flour
    1 egg, beaten
    salt and pepper to taste
    oil (to fry in)
Preparation
    Mix squash and salt.
    Let drain 15 minutes, then squeeze out excess liquid.
    Mix all other ingredients and squash together. Drop by spoonfuls into hot oil and fry until brown.
    Drain on paper towels. These are good.
