Chicken Tacquitos - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    3/4 lb. chicken, in 1/2-inch pieces
    1/2 c. chopped onions
    1 c. thick salsa
    1 (11 oz.) can corn with red and green peppers, drained
    1 pkg. Ortega taco shells
Preparation
    Cook chicken 2 minutes in oil.
    Stir well.
    Add onions and peppers; cook until chicken is done.
    Drain; put aside.
    Over medium heat, in same pan, put salsa and 6 ounces of Cheddar.
    Cook and stir until cheese melts.
    Add the chicken.
    Break tacos into 4 pieces each.
    Spoon 1 tablespoon mix onto shell; sprinkle with cheese.
    Bake at 350\u00b0 for 5
    minutes, until cheese melts.
    Makes 40 servings.
