Zucchini Squash Relish - cooking recipe

Ingredients
    10 c. peeled zucchini
    4 c. onion
    5 Tbsp. salt
    1 Tbsp. nutmeg
    1 Tbsp. dry mustard
    4 c. sugar
    1/2 Tbsp. pepper
    2 1/2 c. vinegar
    1 Tbsp. turmeric
    1 red pepper, ground
    1-2 green pepper, ground
    2 Tbsp. celery seed
Preparation
    Grind up zucchini and onion.
    Add salt.
    Let stand for several hours or overnight.
    Drain; rinse with cold water and drain again. Add nutmeg, mustard, sugar, pepper, vinegar, turmeric, celery seed, red and green peppers.
    Cook 30 minutes.
    Seal hot in hot sterile jars.
    Makes 7-8 pints.
