Ingredients

3 c. rice, cooked
2/3 c. raisins
2 1/2 c. milk
1 c. sugar
2 tsp. vanilla
2 tsp. grated lemon peel
1/4 tsp. salt
6 eggs, lightly beaten
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/8 tsp. cardamom
Preparation

Combine rice, raisins, half the milk, sugar, vanilla, lemon peel and salt in a large mixing bowl.
In a smaller bowl, beat together remaining milk, eggs and spices.
Blend milk mixture into rice mixture.
Pour into a buttered 2-quart baking dish.
Sprinkle top with cinnamon.
Bake in 350\u00b0 oven for 40 to 45 minutes until knife inserted in center comes out clean.
