Lomo Saltado Peru(Tenderloin Stir-Fry) - cooking recipe

Ingredients
    1 lb. beef tenderloin
    salt and pepper
    1 large onion, sliced
    1 sweet pepper, cut in strips
    2 tomatoes, peeled and cut
    1 clove garlic, minced
    peas (canned or frozen)
    tomato juice (optional)
    1/2 c. chopped parsley
    French-fried potatoes (in proportion to meat mixture)
Preparation
    Cut beef into strips and season.
    Cook meat in fat over low heat.
    When meat is fairly tender, add sliced onion and pepper, sauteing until nearly cooked.
    Add tomatoes, garlic, peas and parsley.
    Tomato juice may be added for flavoring is desired. When ready to serve, mix this with some French fries and serve with boiled rice.
