Yankee Pot Roast - cooking recipe
Ingredients

1/4 c. olive oil
2 1/2 to 3 lb. boneless chuck roast
1 3/4 c. water
1 medium onion, sliced
1 large rib celery, sliced
2 small turnips, cut into chunks
1 medium carrot, sliced
1/2 c. chopped fresh parsley
4 oz. mushrooms, thickly sliced
1 tsp. liquid beef bouillon concentrate
1/2 tsp. guar or xanthan gum
Preparation

Put the oil in a Dutch oven over medium heat and sear the roast in the oil until it's dark brown all over. Remove the roast from the Dutch oven. Put 1/4 cup of the water and the sliced onions in the Dutch oven and place the roast directly on top of the onions. Cover the Dutch oven; set the burner to low and forget about it for 1 1/2 to 2 hours.
