Chilled Fresh Strawberry Soup - cooking recipe

Ingredients
    1 qt. strawberries, washed and hulled
    1 1/2 c. water
    1/2 c. sugar
    1 Tbsp. cornstarch
    2/3 c. cream
    1/8 tsp. salt
    dash of cinnamon
    1/2 c. sour cream (optional) on top
    honey to taste
    champagne (optional)
Preparation
    Combine strawberries, water and sugar in 3-quart saucepan. Cover; bring water to a boil.
    Lower the heat, remove the cover and simmer, uncovered, until the berries are very soft, about 15 minutes.
    Puree the mixture in a blender or food processor, then strain it through a sieve or cheesecloth to remove the majority of the seeds.
    Return it to the pan.
    Stir the cream mixture into the strawberry mixtures and heat or simmer for 1 to 2 minutes, or until slightly thick.
    Remove from heat; chill for 2 hours.
    Add and mix in champagne, if you would like.
    Top each serving with sour cream.
