Congo Chicken And Okra(Fetri Detsi) - cooking recipe

Ingredients
    4 boned and skinned chicken breasts
    1 onion, chopped
    1 tsp. salt
    2 tomatoes, peeled
    2 to 4 hot chili peppers or 1/2 tsp. crushed red pepper
    2-inch slice fresh ginger root
    4 c. water
    12 oz. fresh or frozen okra, sliced
    1/4 c. tomato paste
    2 c. cooked rice
Preparation
    Place chicken and onion in a heavy saucepan. Sprinkle with salt. Chop tomato, chili peppers and ginger very fine.
    Add to chicken.
    Pour in water and bring to a boil. Reduce heat and simmer, covered, for about 20 minutes or until chicken is barely tender. Add okra. Stir in tomato paste. Continue simmering until chicken and okra are tender. Serve over cooked rice.
