Frittata Lorraine - cooking recipe

Ingredients
    8 eggs, slightly beaten
    1 c. shredded Swiss or Cheddar cheese
    1/2 c. water
    8 slices bacon, cooked crisp and crumbled
    2 tsp. minced onions
    1/4 tsp. salt
    1/8 tsp. nutmeg
    1/8 tsp. pepper
    1 Tbsp. butter
Preparation
    Beat together eggs, 3/4 cup cheese, water, bacon, onion, salt, nutmeg and pepper.
    Melt butter in an iron 10-inch skillet over medium heat.
    Pour egg mixture in and cook, without stirring, over low to medium heat until set, 7 to 9 minutes.
    Sprinkle with remaining cheese.
    Broil about 5 to 6 inches from heat for 2 to 3 minutes.
    Cut into wedges to serve.
    Serves 6.
