Mother'S Lemon Pie Filling - cooking recipe
Ingredients

1/2 c. flour
1 1/4 c. sugar
1/8 tsp. salt
3 egg yolks
1 1/2 c. water
1 1/2 tsp. grated lemon rind
1/3 c. lemon juice
3 Tbsp. sugar (additional)
Preparation

Combine flour, sugar and salt in double boiler. Beat egg yolks until light and add with water to dry ingredients.
Cook about 10 minutes or until thick, stirring constantly.
Add lemon rind and juice. Cool slightly before pouring into baked pie shell. Top with meringue. Delicious!
