Hobo Breakfast - cooking recipe

Ingredients
    4-5 med. potatoes peeled and cut into slices
    1 med. onion chopped
    1 lb. sausage crumbled, cooked and drained
    4 eggs beaten
    1 c. shredded cheese (more or less to taste)
    cooking oil
    salt and pepper to taste
Preparation
    Cover bottom of large skillet with oil.
    Add onions.
    Saute for 2 mins. on medium heat.
    Add potatoes.
    Cover and cook until desired tenderness, stir with spatula occasionally.
    Fold in sausage.
    Pour eggs over mixture.
    Cover and cook until eggs are done (3-5 mins.)
    Remove from heat, top with shredded cheese. Cover to let cheese melt.
