Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    2 tsp. baking soda
    2 tsp. cinnamon
    3/4 c. sugar
    1 1/2 c. shredded carrot
    2 large cooking apples, peeled, cored and shredded
    3/4 c. coconut
    1/2 c. raisins
    1/2 c. chopped pecans
    1/2 c. vegetable oil
    3 eggs, slightly beaten
    1 c. unsweetened applesauce
    1/2 tsp. vanilla
Preparation
    Combine flour, cinnamon and soda in a large bowl.
    Stir in sugar.
    Add carrot, apples, coconut, raisins and pecans.
    Stir. Make a well in center of the mixture.
    Combine oil, eggs, vanilla and applesauce.
    Add to dry ingredients, stirring just until moistened.
    Spoon batter into greased or papered muffin pans, filling 3/4 full.
    Bake at 375\u00b0 for 18 to 20 minutes or until golden brown.
    Yields 2 dozen.
