Chocolate And Raspberry Cake - cooking recipe

3 egg yolks
1 small whole egg
1/2 c. sugar
2/3 c. blanched almonds, finely ground
1/2 c. + 2 Tbsp. unsweetened cocoa
1/4 c. + 1 Tbsp. flour
3 Tbsp. butter, melted and cooled
4 egg whites
1 1/3 c. heavy cream, scalded
1 lb. semi-sweet chocolate, grated
Raspberry Brandy Syrup
1 1/2 Tbsp. seedless raspberry jam
Preparation

In a large bowl, beat egg yolks, whole egg and sugar until the mixture is thick and light; fold in almonds.
Into a bowl, sift cocoa and flour together 3 times and fold into egg mixture alternately with the melted butter.
