Haitian Black Beans(My Favorite) - cooking recipe

Ingredients
    2 c. dried black beans, picked over, rinsed and soaked
    4 c. water (approximately)
    2 large onions, chopped (2 c.)
    1 c. chopped green pepper (1 large)
    1 Tbsp. minced garlic
    2 bay leaves
    1/2 tsp. salt (if desired)
    1/4 tsp. ground black pepper
    1/4 tsp. oregano
    1/4 tsp. thyme
    3 Tbsp. cider vinegar
    1 (4 oz.) jar pimientos, drained and chopped
Preparation
    Drain the soaked beans and add them to the water in a medium saucepan. Bring the water to a boil.
    Reduce the heat, cover the pan and simmer the beans for 30 minutes.
    Add the onions, green pepper, garlic, bay leaves, salt, pepper, oregano and thyme. Simmer the ingredients 1 hour longer.
    Check after 40 minutes and add more water, if necessary. Stir in the vinegar and simmer the beans for another minute.
    Five minutes before serving the beans, remove the bay leaves. Stir in the pimientos and heat the beans, stirring often
    to avoid scorching.
