Beadie'S Sweet Potato Coffee Can Cakes - cooking recipe
Ingredients

2 c. sweet potatoes, mashed
3 c. sugar
3 1/2 c. flour
1/3 c. orange juice
4 eggs
1 c. dark raisins
1 tsp. cinnamon
1 tsp. salt and 1 tsp. soda (added if plain flour
pinch of nutmeg (optional)
1 c. nuts
1/2 c. coconut (optional)
Preparation

Mix ingredients.
Fill 4 pound coffee cans 1/2 full.
Bake at 350\u00b0 for 1 hour.
Cool.
Replace lids to keep.
May freeze wrapped in foil.
