Ingredients

8 oz. cheese, shredded (a combination of Cheddar and Monterey Jack works well)
4 medium onions, sliced
1/3 c. parsley
1 to 1 1/2 tsp. sage
3 Tbsp. butter
4 eggs
1 Tbsp. sugar
1 tsp. cinnamon
1/4 tsp. ginger
4 Tbsp. currants (optional)
1 deep dish pie crust
Preparation

Steam the onions 10 to 11 minutes on High in the microwave. Combine with the sage, parsley and cheese; mix well.
Stir in eggs.
Cut up the butter into the mixture and add the sugar, cinnamon, ginger and currants.
Pour into the pie shell.
