Chicken Gumbo - cooking recipe

Ingredients
    1 c. onion, chopped
    3 Tbsp. peanut oil
    2 Tbsp. parsley
    salt and pepper to tate
    3 split chicken breasts or 6 thighs, cooked and cut
    1 1/2 qt. broth
    1/2 c. tomato paste
    3 cloves garlic, crushed
    1/4 c. celery
    2 Tbsp. flour (for roux)
    2 plus c. okra, cut
    1 lb. tomatoes
    1 bay leaf
Preparation
    Saute onion in oil and add garlic.
    Stir in flour to make a roux.
    Stir constantly as it browns.
    Add other ingredients and simmer for approximately 1 hour.
