Sweet Potato Hash Browns - cooking recipe

Ingredients
    4 medium size sweet potatoes, peeled and chopped
    1 Tbsp. butter
    2 tsp. vegetable oil
    1 small onion, chopped
    1/2 tsp. salt
    1/2 tsp. pepper
    1 tsp. brown sugar
Preparation
    In saucepan, place potatoes and enough water to cover.
    Heat to boiling; cook for 5 minutes.
    Drain and set aside.
    In large skillet, heat oil over medium-low heat.
    Add onion; saute for 3 minutes.
    Add drained sweet potatoes, salt and pepper.
    Cover; cook for 15 minutes, stirring occasionally.
    Increase heat to medium-high.
    Add butter and brown sugar to potatoes.
    Cook, uncovered, 5 to 10 minutes longer.
    Turn occasionally with spatula.
