Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1/2 tsp. salt
    1 can mushroom soup
    1 chopped onion
    1/2 stick margarine, melted
    1/2 (8 oz.) herb stuffing mix
Preparation
    Peel, cube and boil eggplant.
    Mix with salt, soup, onion and egg in bowl.
    Mix margarine and stuffing mix.
    Add 1/2 mix to mixture.
    Pour in 2-quart casserole; top with stuffing mix.
    Bake at 350\u00b0 for 40 to 45 minutes.
