Spiced Vinegar - cooking recipe

Ingredients
    4 1/2 qt. white wine vinegar
    1 whole nutmeg
    1 small piece ginger root, peeled
    1/2 tsp. whole cloves
    2 tsp. mustard seed
    4 Tbsp. salt
    1 tsp. black peppercorns
    peel of 1/2 orange
    6 shallots, quartered
Preparation
    In large earthen crock or glass container with lid, combine all ingredients and stir to mix.
    Cover tightly and leave to steep in warm place or in the sun for 3 to 4 weeks.
    Strain into bowl, pressing to extract flavor.
    Pour through funnel into clean bottle and cork.
    Store in cool dark place.
    Makes 4 1/2 quarts.
    Good to use for seasoning grilled meat or meat marinade.
