Tomato Relish - cooking recipe

Ingredients
    3 qt. peeled and chopped tomatoes
    3 c. diced celery
    1 c. chopped green pepper
    1 c. white vinegar
    2 c. sugar (white)
    1 1/2 tsp. pepper
    2 c. chopped onions
    1/4 c. salt
    1/4 c. brown sugar
    1 1/2 tsp. pickling spices
Preparation
    Combine vegetables and salt.
    Let stand overnight.
    Drain, do not press vegetables.
    Place in large kettle; add sugars, pepper, vinegar and spices tied in cheesecloth.
    Bring to a boil, reduce and simmer uncovered 15 minutes.
    Ladle into jars.
    Process in boiling water 10 minutes.
