Ingredients

1/4 c. sugar
2 Tbsp. lemon juice
2 1/3 c. powdered sugar
1/2 c. coconut (optional)
1 egg
1/2 c. oleo
1 Tbsp. grated lemon rind
Preparation

In a small bowl, mix sugar and egg thoroughly.
In a saucepan, boil, for one minute, lemon juice and powdered sugar together, stirring often.
Add this mixture to sugar and egg mixture, and blend well.
Add oleo and rind; beat until creamy.
Spread on cake and sprinkle with coconut, if desired.
