Tomato Sauce - cooking recipe

Ingredients
    1 peck tomatoes (13 1/4 lb.)
    6 large onions
    8 to 10 cloves garlic
    1 bunch celery
    3 green peppers
    1/4 c. coarse salt
    2 Tbsp. pepper
    2 Tbsp. basil
Preparation
    Wash and quarter tomatoes.
    Place in large kettle.
    With potato masher, mash as much as possible.
    Chop finely the onions, celery, peppers and tomatoes.
    Add seasonings; bring to boil. Simmer until most of liquid has evaporated.
    Mixture is like thick cream, then press through cone (can take hours!).
    Makes 10 1/2 pints.
