Zucchini Bread A La Jo Rigsby - cooking recipe
Ingredients

3 eggs
2 c. sugar
2 c. grated zucchini
3 c. flour
1 tsp. soda
1/2 tsp. baking powder
1/2 c. chopped nuts
1 c. cooking oil
3 tsp. vanilla
1 tsp. salt
1 Tbsp. cinnamon
Preparation

Grease two 5 x 9-inch bread pans.
Grate zucchini and set aside.
Beat eggs until light and fluffy.
Add oil, sugar, grated zucchini and vanilla.
Mix until blended.
Stir in nuts.
Divide batter between pans.
Bake at 350\u00b0 for 1 hour.
