Green Tomato Bars - cooking recipe
Ingredients

4 c. finely chopped green tomatoes
2 c. packed brown sugar, divided
2 Tbsp. lemon juice
1 tsp. lemon extract
3/4 c. butter, softened
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
2 c. old-fashioned oats
1/2 c. chopped walnuts
Preparation

Drain tomatoes on paper towel for 10 minutes. In a saucepan, combine tomatoes, 1 cup of brown sugar and the lemon juice. Simmer, uncovered, for 20 to 25 minutes or until thickened. Remove from the heat and stir in the extract. Set aside.
