Old Fashion Potato Soup - cooking recipe

Ingredients
    8 c. raw diced potatoes
    1 small onion, chopped
    2 stalks celery, diced
    1/2 c. carrots, shredded
    1/2 tsp. parsley flakes
    salt and pepper to taste
Preparation
    Combine all ingredients in a saucepan.
    Barely cover with water.
    Cover and cook on medium heat until potatoes are a little mushy.
    Remove from heat.
    Make a white sauce with 2 tablespoons flour to 1/2 cup of milk.
    Stir into vegetables.
    Do not drain off water.
    Add an additional 1 cup milk and 3 tablespoons butter. Diced ham may be added.
    Reheat and serve.
