Quick Chicken Skillet - cooking recipe

Ingredients
    1 medium onion, chopped
    1 medium green pepper, chopped
    1/4 c. margarine
    2 c. diced, cooked chicken
    2 c. diced, cooked potatoes (about 4 small)
    1/2 c. picante sauce
    1 tsp. ground cumin
    1/2 tsp. salt
    1 c. (4 oz.) shredded Cheddar or Monterey Jack cheese
Preparation
    Cook onion and green pepper in margarine in large skillet until onion is tender, but not brown.
    Add cooked potatoes, cooked chicken, picante sauce, cumin and salt; mix well.
    Simmer about 5 minutes, stirring occasionally.
    Top with cheese; cover skillet and let cheese melt.
    Serve with additional picante sauce if desired.
