Zucchini Muffins - cooking recipe

Ingredients
    3 c. flour
    1 c. sugar (optional)
    2 tsp. cinnamon
    salt
    1 tsp. baking powder
    3/4 tsp. baking soda
    1 c. nuts, chopped
    1 c. chopped dates (replaces sugar)
    3 eggs
    1 c. oil
Preparation
    In a separate bowl, combine 2 cups zucchini, eggs and oil; stir.
    Add dry ingredients all at once
    and bake in greased muffin pans at 350\u00b0 for 25 to 30 minutes.
