Swiss Steak - cooking recipe

Ingredients
    2 to 3 lb. round steak, cut in 1 1/2-inch pieces
    2 tsp. salt
    1/2 c. flour
    3 Tbsp. fat
    1 onion, sliced
    1 small green pepper, sliced
    1 c. water or 1 c. strained tomatoes
Preparation
    Combine salt with flour.
    Pound flour into both sides of steak with the edge of a heavy saucer or a meat mallet.
    Place fat in the pan; melt over medium heat and add steak.
    Brown well on both sides; add onion, green pepper and boiling water or strained tomatoes.
    Cover and reduce heat to low for 1 hour or until meat is tender.
    Remove to preheated platter; pour juices over meat and garnish with parsley.
    Serves 4 to 6.
