Caramels - cooking recipe

Ingredients
    2 c. sugar
    2 c. whipping cream
    1 3/4 c. light corn syrup
    dash of salt
    1 c. butter
    1 1/4 tsp. vanilla
    1 c. chopped nuts (optional)
Preparation
    Boil all together except 1 cup cream, nuts and vanilla.
    Boil 30 minutes.
    Add second cup of cream and boil to firm ball (248\u00b0 on candy thermometer).
    Remove from heat; add vanilla and nuts and pour into well buttered cookie sheet.
    Cook in a heavy pan and stir.
    A pressure cooker kettle works well.
