Microwave Lemon Curd - cooking recipe

Ingredients
    8 Tbsp. (1 stick) unsalted butter
    3 large eggs
    1 c. granulated sugar
    grated peel of 3 large lemons
    1/2 c. fresh lemon juice
Preparation
    In a microwavable bowl, microwave the butter for about 3 minutes on High, until melted.
    In a small microwave-proof bowl, whisk together the eggs, sugar, lemon peel and juice until well combined.
    Whisk in the melted butter.
    Microwave on High for 1 1/2 to 2 minutes, whisking often
    (may take longer), until the curd is smooth and thick enough to coat a wooden spoon.
    Remove from microwave and pour into hot sterilized jars (or glass bowl with a cover if you're going to use within a couple of days). Cover and allow to cool at room temperature.
    Store in refrigerator and use within 4 weeks.
    Makes about 2 cups.
