Lo-Cal Rice Pudding(Top Of Stove) - cooking recipe

Ingredients
    1/2 c. rice (rinse well)
    1 qt. milk (3 1/2 c. + 1/2 c.)
    4 packets Sweet 'N Low
    1 tsp. margarine
    1/8 tsp. salt
    1 egg
    1/2 tsp. vanilla
    1/2 c. raisins
Preparation
    In heavy pot, put rice, 3 1/2 cups milk, Sweet 'N Low and salt.
    Stir on medium heat until it boils.
    Reduce heat to simmer. Cover and stir often 25 to 35 minutes until rice is tender.
    Beat egg, 1/2 cup milk and vanilla.
    Slowly stir into rice mixture. Cook and stir until slightly thick 2 to 3 minutes.
    Add raisins. Spoon into bowl and refrigerate.
    (If you like a thicker pudding, do not rinse rice.)
