Ingredients

2 c. fresh or leftover mashed potatoes
1 egg, beaten
1/4 c. onion, chopped
1/2 c. self-rising flour
3 Tbsp. shortening
Preparation

Mix together potatoes, egg, onion and flour.
Drop a spoonful in a skillet of hot grease.
Pat with a spoon to flatten.
Brown on both sides.
