Enchiladas - cooking recipe

Ingredients
    1 (28 oz.) can Las Palmas enchilada sauce
    1 small onion, cut up
    1 doz. corn tortillas
    2 lb. ground beef (lean)
    1 large pkg. shredded Cheddar cheese
    cooking oil
Preparation
    In a large skillet, cook ground beef until crumbly.
    Drain fat.
    (Include onion when cooking the beef.)
    Open the can of enchilada sauce and pour approximately 1/2 cup of sauce into beef; mix well.
    In a small skillet, heat 1/2 cup of oil until warm. Cook the corn tortillas slightly on each side until they are soft. In a large baking dish place a tortilla inside.
    Spoon into the tortilla a couple of tablespoons of meat.
    Add a bit of cheese and roll the tortilla until the bottom is toward the bottom of the baking dish.
    Continue until you run out of meat or tortillas. Pour the rest of the enchilada sauce on the top of the enchiladas and pour the remaining cheese on top of that.
    Bake at 350\u00b0 for 20 to 25 minutes or until cheese melts.
    Serve with rice or beans. Garnish with fresh olives.
