Arroz Con Pollo - cooking recipe

Ingredients
    3 Tbsp. all-purpose flour
    4 skinless, boneless chicken breast halves, cut crosswise in 4 pieces
    2 Tbsp. olive oil
    2 c. water
    1 (8 oz.) box yellow rice with seasoning
    1 c. frozen green peas
    1 (6 1/2 oz.) jar pimientos, cut in strips
Preparation
    Coat chicken in flour.
    Heat oil in large skillet until hot. Add chicken and cook for 4 to 5 minutes, stirring and turning 2 to 3 times until chicken is golden on all sides.
    Remove to a small bowl.
    Pour water in skillet.
    Bring to a boil.
    Stir in rice, seasonings and peas.
    Cover; simmer for 18 to 20 minutes, until most of the liquid is absorbed.
    Stir in chicken and pimientos. Cook an additional 3 minutes or until water is absorbed and chicken is white in center.
