Wild Rice Salad - cooking recipe

Ingredients
    1 c. wild rice
    2 c. diced chicken, cooked
    1 1/2 c. halved green grapes
    1 c. sliced water chestnuts, drained
    3/4 c. regular or light mayonnaise
    1 c. cashew halves
Preparation
    Cook rice according to package directions. Drain well.
    Cool to room temperature.
    Spoon into a large bowl. Add chicken, grapes, water chestnuts and mayonnaise.
    Toss gently with fork. Cover and chill.
    Just before serving, line dish with lettuce and add cashews.
