Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant
1 medium onion, minced
3 c. grated cheese
3 c. crushed cracker crumbs
1 1/2 c. milk
1 stick oleo
4 eggs
salt and pepper to taste
Preparation

Peel and slice
eggplant; cook until tender.
Drain and mash. Add onion, milk and unbeaten eggs.
Melt oleo, then add the crumbs and cheese; mix well. Add half of the cheese mixture to the eggplant.
Pour in casserole dish. Put remaining cheese mixture on top. Bake at 350\u00b0 until light brown and bubbly. Yields 8 servings.
