Chicken Scallopini - cooking recipe
Ingredients

4 oz. chicken breast
seasoned bread crumbs
1 egg, scrambled
1/4 c. flour
5 medium size mushrooms
3 Tbsp. margarine or butter
1/2 c. Chablis wine
Preparation

Dip chicken breast in flour, then into egg, then into bread crumbs.
Heat saute pan to medium heat and melt butter or margarine.
Place chicken in pan and cook each side 2 minutes, then add mushrooms and Chablis.
Cover and simmer 7 minutes or until done.
Serve atop rice or pasta, then pour any remaining wine/butter mixture and mushrooms on top.
