Apricot-Almond Antarctica - cooking recipe

Ingredients
    1 (11 oz.) box vanilla wafers, crushed
    1 1/3 c. slivered almonds
    1/2 c. butter, melted
    2 Tbsp. almond extract
    1 1/2 qt. vanilla ice cream, softened
    1 (18 oz.) jar apricot jam
Preparation
    Line 13 x 9 x 2-inch pan with aluminum foil.
    Cover bottom of pan with 1/3 of the crumb mixture.
    Spread 1/2 of the ice cream over crumbs.
    Spread 1/2 of the jam over ice cream.
    Repeat layers, using next 1/3 of the crumbs and remaining ice cream and jam.
    Top with last 1/3 of crumbs.
    Freeze.
    Cut into squares. Garnish each serving with a fresh mint leaf.
    Makes 12 to 15 servings.
