Chicken And Scallions - cooking recipe
Ingredients

4 split chicken breasts
2 Tbsp. oil
5 to 6 scallions, minced
2 cloves garlic, minced
1 shallot, minced
8 oz. can peeled tomatoes
1/2 c. white wine
salt and pepper to taste
Preparation

Brown chicken in oil and remove.
In same pan saute scallions, garlic and shallot.
Meanwhile, remove tomatoes from can, place in bowl and chop into small chunks.
Add to pan.
Simmer 5 minutes. Add wine, salt and pepper.
Cook on medium heat 5 minutes.
Reduce heat and add chicken, meat side down.
Simmer 45 minutes or until chicken is done.
